Primary vs Secondary Fermentation in Winemaking

Many beginner winemakers hear the terms primary fermentation and secondary fermentation and assume they are two completely separate fermentation processes. In reality, the difference mostly refers to the type of container used and what stage the wine is in.

Understanding the difference helps you manage your wine properly and improve clarity, flavour, and stability.

What Is Primary Fermentation?

Primary fermentation is the first and most active stage of winemaking. During this stage, yeast convert sugars in the juice into alcohol and carbon dioxide.

This stage usually lasts about 5 to 10 days, depending on the recipe, yeast strain, and temperature.

Because fermentation is very vigorous at this stage, winemakers usually use larger containers that allow space for foam and bubbling.

A typical container used for primary fermentation is a fermenting bucket. Buckets provide plenty of headspace and are easy to open for stirring or adding ingredients.

What Happens During Primary Fermentation?

  • Yeast rapidly convert sugar into alcohol
  • Carbon dioxide bubbles vigorously
  • Foam and sediment form
  • Most alcohol is produced

Because the process is very active, airlocks may bubble quickly and the wine can look cloudy.

What Is Secondary Fermentation?

Secondary fermentation is the stage after the most active fermentation has slowed down. At this point, the wine is transferred into a sealed container to finish fermenting slowly and begin clearing.

This transfer process is called racking.

Most winemakers move the wine into a container such as a carboy during this stage.

The carboy has very little air space, which protects the wine from oxygen exposure.

What Happens During Secondary Fermentation?

Despite the name, fermentation is usually much slower during this stage. Instead of vigorous bubbling, several important things happen:

  • remaining sugars finish fermenting
  • yeast and particles settle to the bottom
  • wine begins clearing
  • flavours become smoother

This stage can last anywhere from a few weeks to several months depending on the wine.

Why Use Secondary Fermentation?

Moving wine to a secondary container offers several benefits:

  • reduces sediment in the finished wine
  • protects the wine from oxygen
  • improves clarity
  • allows flavours to mature

During this process, many winemakers rack the wine using tools like an Easy Siphon to transfer the wine without disturbing sediment.

Do All Wines Need Secondary Fermentation?

Most wines benefit from a secondary fermentation stage, especially fruit wines and grape wines that require time to clear.

However, some very simple wine kits may complete fermentation quickly and clear faster, reducing the time needed in secondary.

How Long Should Wine Stay in Secondary?

Wine usually remains in secondary fermentation for 3 to 8 weeks, although some wines stay longer if they need additional clearing or aging.

Many winemakers rack the wine one or two more times during this stage to remove sediment and improve clarity.
