Healthy Fermentation Starts with Healthy Yeast
Successful fermentation depends on more than adding a packet of yeast. Yeast also needs usable nitrogen, vitamins, minerals, amino acids, healthy cell membranes, a suitable temperature, and proper oxygen management during its early growth phase.
When yeast is underfed or stressed, fermentation may start slowly, produce sulphur aromas, lose momentum, or stop before all fermentable sugar has been consumed. A balanced nutrient plan helps reduce these risks while supporting cleaner flavour and aroma development.

Choosing Fermentation Supplies
Choose the Right Yeast
Different yeast strains produce different flavour profiles, alcohol tolerance, fermentation speed, ester production, mouthfeel, and aroma characteristics. They also differ in nitrogen demand and sensitivity to heat, low pH, high sugar, and increasing alcohol.
A strong strain such as EC-1118 may tolerate difficult conditions better than a more sensitive aromatic strain, but even robust yeast can become stressed in low-nutrient mead, cider, fruit wine, or high-gravity must.
Understand Yeast Nutrient
The name “yeast nutrient” does not describe one universal formula. Some products are primarily DAP, while others contain yeast derivatives, vitamins, minerals, amino acids, or micronutrients.
Always check the ingredients before combining nutrient products. A yeast nutrient and a separate dose of DAP may supply the same form of nitrogen.
Understand DAP
Diammonium phosphate, commonly called DAP, is a concentrated source of inorganic ammonium nitrogen. It is most useful during early yeast growth and active fermentation.
DAP is inexpensive and effective, but it does not provide vitamins, yeast hulls, sterols, fatty acids, or a complete range of amino acids. It should not automatically be treated as complete yeast nutrition.
Understand Yeast Energizer
Yeast energizer usually provides broader support than pure DAP. Depending on the formula, it may contain DAP, yeast hulls, magnesium, vitamins, or other micronutrients.
Energizer can be useful in nutrient-poor must, fruit wine, mead, high-gravity fermentation, or certain sluggish fermentation situations. It should still be measured carefully because many energizers already contain DAP.
Use Nutrients at the Right Time
Yeast uses nutrients most effectively during early growth and active fermentation. Many nutrient schedules divide the total addition into several smaller doses and complete major additions by approximately the one-third sugar break.
Adding DAP late in fermentation may not solve a slowdown because yeast may already be limited by alcohol stress, temperature, low pH, damaged membranes, or inhibitory fermentation by-products.
Build Flavour During Fermentation
Oak chips and tannins can be introduced during or after fermentation to increase complexity, improve mouthfeel, support structure, and influence the finished aroma profile.
The timing, dosage, oak species, toast level, and contact time all affect the result. Start conservatively and taste throughout the ageing process.
Yeast Nutrition by Beverage Type
Grape Wine
Natural grape must can contain adequate nitrogen or be severely deficient depending on variety, vineyard conditions, ripeness, clarification, and processing. White juice that has been heavily clarified may contain fewer solids and survival factors than red must.
Fruit Wine
Fruit wine often contains added sugar and water, which increase fermentation demand without adding corresponding nutrition. A broad nutrient or energizer may be especially useful in diluted or high-gravity fruit recipes.
Cider
Apple juice can be low in yeast-assimilable nitrogen. Proper supplementation may help prevent slow fermentation and sulphur aroma, although not every cider requires a large nutrient addition.
Mead
Honey provides abundant sugar but very little usable nitrogen. Mead usually benefits from a calculated nutrient program, often divided into staggered additions during the early stages of fermentation.
Beer
All-malt wort normally contains more natural amino nitrogen and micronutrients than honey or fruit juice. High-gravity beer, sugar-based fermentation, and adjunct-heavy wort may still benefit from a brewing-specific nutrient.

What is primary fermentation?
Primary fermentation is the most active stage of fermentation, when yeast grows and converts fermentable sugars into alcohol, carbon dioxide, and numerous flavour and aroma compounds. It commonly takes place in a fermentation bucket or another vessel with sufficient headspace.
Do I need yeast nutrient?
Many recipes benefit from yeast nutrient, particularly fruit wine, cider, mead, high-gravity fermentation, or must known to be low in yeast-assimilable nitrogen. Some commercial kits and all-malt beer recipes may already contain sufficient nutrition.
What is the difference between DAP and yeast nutrient?
DAP is one specific compound that supplies inorganic nitrogen. Yeast nutrient is a general product name and may refer to pure DAP or to a broader blend containing vitamins, minerals, amino acids, or yeast derivatives.
What is the difference between yeast nutrient and yeast energizer?
A basic nutrient may primarily supply nitrogen. Yeast energizer often contains additional ingredients such as yeast hulls, magnesium, vitamins, or trace nutrients. The exact difference depends on the product formula.
Can I use yeast nutrient, DAP, and energizer together?
They can be combined only when the total nutrient plan has been calculated correctly. Many nutrient and energizer products already contain DAP, so using full doses of all three can result in excessive ammonium nitrogen.
What is YAN?
YAN means yeast-assimilable nitrogen. It describes forms of nitrogen that yeast can absorb and use during fermentation, including ammonium nitrogen and certain amino nitrogen sources.
When should nutrient be added?
Nutrients are generally most useful during yeast growth and early active fermentation. Many staggered schedules complete major additions by the one-third sugar break. Always follow the directions for the specific product.
Can nutrient fix a stuck fermentation?
Sometimes an early nutrient deficiency can be corrected, but a true stuck fermentation may also involve temperature, pH, alcohol stress, preservatives, damaged yeast, or inhibitory compounds. Late DAP additions are not a universal solution.
Why does my fermentation smell like rotten eggs?
Rotten-egg aroma is commonly associated with hydrogen sulphide. Low nitrogen can contribute, but temperature stress, vineyard sulphur, yeast strain, or other fermentation problems may also be involved.
Can too much nutrient cause problems?
Yes. Excess nutrient may remain unused, increase fermentation heat, alter aroma development, or provide nutrition for spoilage organisms after fermentation. Always measure additions accurately.
Do different yeast strains require different nutrition?
Yes. Yeast strains differ in nitrogen demand, fermentation speed, alcohol tolerance, temperature range, and sensitivity to stress. Robust strains still require adequate nutrition when fermenting low-nutrient or high-gravity must.
Can oak chips be added during fermentation?
Yes. Many winemakers add oak during primary or secondary fermentation depending on the desired flavour profile and extraction level. Oak may also be added during bulk ageing.
