Potassium metabisulfite is widely used in winemaking to protect wine and must from oxidation, spoilage organisms, and unwanted bacteria. It releases sulfur dioxide (SO₂), which helps preserve freshness and stability during the winemaking process.
This sulfite is commonly added during crushing, fermentation, and storage to help control wild yeast and maintain wine quality.
Common Uses:
- Protect wine from oxidation

- Sanitize winemaking equipment
Typical Usage:
- For sanitizing: use approximately 2 oz per gallon of water.
- For antioxidant and antimicrobial protection: about 1/4 teaspoon per 6 gallons.
