Diammonium Phosphate (DAP) is a concentrated source of yeast-assimilable nitrogen (YAN) used to support healthy yeast growth during primary fermentation. It helps yeast reproduce efficiently, maintain strong fermentation activity, and reduces the risk of sluggish or stuck fermentations caused by nitrogen deficiency.

DAP is especially beneficial for fruit wines, white wines, mead, cider, and other fermentations that may be naturally low in nutrients. When added at the appropriate stage of fermentation, it helps yeast complete fermentation more reliably while reducing the likelihood of hydrogen sulphide (rotten egg) aromas associated with stressed yeast.
